News from Asheville, NC, the Ananda Girisuta master unit:

Geoffrey Steen (Jiivanmukta) and his friend Kevin Lane have purchased 10 acres of land between the Brother's and Sister's Master Units and are quickly developing a model small farm. Currently, Raven Ridge Farm has a 4-cow dairy, 50 laying hens, and a large 1,000-tree nursery of edible trees including hazelnuts, chestnuts, apples, pears, blueberries, persimmons, cherries, pecans, and pawpaws all propagated on the farm! We're also planting and saving traditional varieties of flour corn, squash and bean seed in two large gardens.

Didi Ananda Usa’s Spinakopita - May 2009

This is a version of the Greek spinach pie, baked in a large pan and individual servings are cut out, filled with fresh greens and salty feta cheese. Didi remarks that she learned by watching others make this rather than by a written recipe. The Greeks are great for using all manner of fresh leafy greens in their cuisine, everything from chard and spinach to turnip greens, fennel and dill fronds, dandelion, sorrel, even the green leaves of the poppy plant. There is a "fasting", or vegan, version of spinakopita, eaten during the Great Lent and other religious fasts, and comprising of spinach, green herbs like dill, parsley or celery, and olive oil, but without eggs or dairy products.

Vegan Pumpkin Pie - December 2008

Vegan Pumpkin Pie

The filling for this vegan recipe needs to set overnight in the refrigerator, so make it the day before you serve it. Also, if you are going to use fresh pumpkin for the pie, do not use the jack-o'-lantern type; the flesh of these large pumpkins is too watery and stringy. Instead, look for small pumpkins, sometimes called pie pumpkins or other varieties of winter squash. To bake, cut pumpkins in half and remove seeds. Set, cut side down, in a lightly oiled baking pan. Bake at 400 for 30 to 40 minutes. Scoop out the cooked flesh and puree. Serves 8.

Tangy Taco Bean Mix

 
2 tbsp oil
1tsp black mustard seeds (didn't use last time)
1/4 tsp asafoetida powder
750 gm large time red kidney beans
1-2 tsp mild curry powder
700 ml tomato and basil puree (use tomato sauce)
1-2 pinches cinnamon
1-2 soy sauce
 
Heat oil in saucepan. Add mustard seeds. When the seeds begin to pop,
add asafoetida. Stir until it turns white and aroma is released.
Stir in kidney beans then add the curry powder.
Add tomato and basil puree, cinnamon, soy sauce and simmer for 2 min.
